As the global demand for matcha intensifies in 2026 and the supply shortage continues, it's almost a must for matcha drinkers to look beyond Uji – and in this case, Japan too. Especially if you're making matcha latte at home using matcha powder, you'll want to know what the best matcha terroirs are, so you can find the best flavour for the drink you want to make.

While Japan remains the spiritual home of the finest ceremonial grades, China has rapidly evolved from a bulk producer to a source of distinct, high-quality terroirs. So in this article, we've selected the top 8 terroirs that are worth knowing about – 4 from Japan, and 4 from China.

### 🇯🇵 Japan: The Pillars of Tradition

**1. Uji, Kyoto**
No list is complete without the 800-year-old gold standard. Uji's misty hills and mineral-rich soil produce the benchmark for complex umami and vibrant color . Look for legacy cultivars like **Samidori** and **Asahi**, which thrive in this historic region to create the creamy texture required for premium koicha (thick tea) .

**2. Yame, Fukuoka**
If you seek a "umami powerhouse," Yame is the answer. Farmers here often shade their fields longer than anywhere else in Japan, resulting in leaves with sky-high levels of L-theanine. This yields a cup that is exceptionally **sweet, round, and creamy** with virtually no bitterness—a truly luxurious experience .

Located in southern Japan, Kagoshima offers a distinct flavor profile thanks to its **volcanic ash soils**. This terroir imparts a unique mineral complexity and a smooth, less astringent taste. ### 🇨🇳 China: The Rise of New Terroirs

**5. Yungui Plateau, Guizhou**
Guizhou is arguably China's most exciting matcha origin. Gardens sit at high altitudes (1,000–1,800 meters), where frequent mist acts as a natural shade, encouraging amino acid accumulation. Often cultivated from a mix of cultivars including **Longjing 43**, **Fuding Dabaicha** and **Zhong Cha 108**, this matcha teroirs usually presents itself as an earthy, robust style balanced with a distinct umami and a clean finish.

**6. Mount Jing Shan, Zhejiang**
To understand China's matcha resurgence, one must start here. This is not just a terroir; it is the ancestral home. As the academic research highlights, it was here at Jing Shan Temple during the Song Dynasty that the OG tea ceremony where matcha was whisked in a bowl – called "tea banquets" (or 茶宴, chayan) – was born. 

Zhejiang, located at a similar latitude to Uji, Japan, possesses a similar climate to the world's most coveted matcha growing region. The best producers will even use Japanese cultivars such as Yabukita, blending it with the region's own distinct Longjing 43 to create a Chinese matcha that is truly unique – at times nutty, at vegetal, and with a silky, lingering finish.

**7. Shaoxing, Zhejiang**
Famed for rice wine, Shaoxing’s terroir is equally suited for tea. Located Southeast of Hangzhou, most famed for Dragonwell (龙井, or Longjing) tea, this region is fast improving its matcha production facilities. Shaoxing producers blend traditional Chinese tea farming practices with sophisticated, modern Japanese matcha-cultivation and production techniques. Expect matcha with a **distinctive vegetal freshness** and the refined craftsmanship characteristic of the region. Shaoxing as a region is well worth a visit. If not for the matcha, then for the picturesque canals and a visit to its ancient town harbouring a rich scholarly history.

Moving north, Shandong is an emerging contender. While better known for green teas, the province is now investing in shade-grown cultivars – what's needed to make matcha. The significant temperature swings between day and night, also known as diurnal range, in Shandong's growing areas could create matcha with a unique **crisp sweetness**, offering a fascinating new profile for adventurous blenders. Whilst we have yet to taste a sample we have been truly impressed by, it is noteworthy that the region's maturing and growing so rapidly as a matcha producing region in China.
